Easy and quick to make, with simple ingredients—fresh strawberries, eggs, sugar, milk and flour—it’s ideal for filling cakes, tarts or desserts in general, but also to enjoy on its own as a delicate spoon dessert: indulgent, fresh and fragrant.

Ingredients

  • 1 1/2 cups strawberries
  • 2 cups milk
  • 3 eggs
  • 3/4 cup sugar
  • 1/4 cup cornstarch (or potato starch or all-purpose flour)

Preparation of the strawberry pastry cream

  • Heat the milk in a saucepan over low heat.
    Wash the strawberries, remove the stems and cut them into pieces.
    Blend them.

  • In a bowl, whisk the eggs with the sugar.
    Add the sifted cornstarch, stirring until you have a smooth mixture.
    Add the well-strained strawberry purée to remove the seeds and mix.

  • Pour the mixture into the milk and stir, cooking until the strawberry pastry cream has thickened.
    Turn off the heat, transfer the cream to a bowl, cover it with cling film directly on the surface, and let it cool completely before using it in your preparations or enjoying it by the spoonful.
