Summer pasta and potatoes is a tasty version of the classic and beloved pasta and potatoes, easy to make and very enjoyable.
Cherry tomatoes, fresh basil, and little else, simple ingredients as in the traditional version, make it tasty and delightful, perfect, even on the hottest days of the year, for everyday cooking and for the whole family, young and old.

Ingredients
- 10.5 oz pasta
- 1.1 lbs cherry tomatoes
- 1.4 lbs potatoes
- 1 clove garlic
- Parmesan cheese (grated)
- basil
- extra virgin olive oil
- salt
Preparation of Summer Pasta and Potatoes
Wash the potatoes and cook them whole and unpeeled for ten minutes in plenty of boiling water, drain and let them cool slightly.
Wash the cherry tomatoes and cut them into wedges.Peel the garlic clove and let it brown with a little extra virgin olive oil in a large pan or wok.
Add the cherry tomatoes, a few basil leaves, salt and let cook over high heat until the tomatoes are wilted.Meanwhile, cook the pasta al dente in plenty of salted boiling water.
Peel the potatoes and cut them into chunks, then add the chunks to the pan with the cherry tomatoes and lower the heat.
Also add the drained al dente pasta to the pan and plenty of grated Parmesan cheese and mix everything thoroughly.
Serve your summer pasta and potatoes immediately.
