The sun pie is a delicious pie with simple flavors and a scenic appearance, easy to prepare.

A recipe presented on a television show a few years ago by Natalia Cattelani, it is a simple pie filled with apricot jam, but made scenic in a simple and ingenious way, and enriched with sugar sprinkles and sliced almonds, perfect as a dessert, but also for breakfast, a snack, or a sweet break, for the family or to impress your guests and friends.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 5 2/3 tbsp butter
  • 6 tbsp sugar
  • 1 egg
  • lemon zest (grated from one lemon)
  • 1 teaspoon baking powder
  • 7 oz apricot jam
  • sugar sprinkles
  • sliced almonds
  • milk

Preparation of the Sun Pie

  • In a large bowl, mix the flour, sugar, grated lemon zest, and baking powder.
    Add the butter cut into small pieces and knead until a sandy consistency is reached.
    Add the egg and knead firmly until you get a smooth and homogeneous dough.
    Form a dough ball, wrap it in some food wrap, and let it rest in the fridge for at least one hour.

  • After this time, on a lightly floured surface, with the help of a rolling pin, roll out the dough into a disk large enough to cover the bottom and edges of a 9 1/2 inch diameter pie mold.
    Slightly butter the pie mold and place the shortcrust disk in it.

  • Place a small plate of about 4 inches in diameter in the center of the pie mold (1) and press gently to imprint a circle in the dough (2), then remove it.
    With a smooth blade knife, cut the created circle into 8 wedges and prick the dough with a fork (3).

  • Fill the “outer disk” of the pie with jam (4), then fold the tips of the wedges and the edges of the dough over the filling (5).
    Brush the surface of the wedges with a little milk and sprinkle with sugar sprinkles. Also, sprinkle the edges of the pie with sliced almonds (6).

  • Bake in a preheated static oven at 340°F for thirty to thirty-five minutes, until golden.
    Remove from the oven, let cool, and serve your sun pie.
