Sweet and sour artichokes are a delicious vegetable side dish, very easy to prepare.
Perfect to accompany both meat and fish dishes, or with fresh or aged cheeses, they can be prepared in advance and enjoyed both hot and cold.
The artichokes contain vitamins, minerals, fibers, and proteins. They are highly digestible and help lower cholesterol and prevent the formation of stones.

Ingredients
- 4 artichokes
- 1 onion
- 1/2 cup breadcrumbs
- 1/6 cup white wine vinegar
- 2 tsp sugar
- basil
- extra virgin olive oil
- salt
Preparation of Sweet and Sour Artichokes
Clean the artichokes following the tutorial you find by clicking HERE, divide them into wedges, and place them in a bowl with cold water and lemon juice.
Chop the onion and let it wilt in a large pan with a few tablespoons of extra virgin olive oil and a little water.Add the drained artichoke wedges and a pinch of salt and let them flavor for about ten minutes over medium heat, stirring often.
Separately dissolve the sugar in the white wine vinegar.Pour the mixture over the artichokes, raise the heat and when the vinegar has evaporated, add the breadcrumbs.
Stir and as soon as the artichokes are slightly browned, turn off the heat and let them cool.
Serve your sweet and sour artichokes sprinkled with chopped basil to taste.
