Sweet cinnamon bread or cinnamon pull apart bread is a bread of Anglo-Saxon origins with an unmistakable aroma and a unique shape, easy to prepare.
The particular shape is achieved with a simple preparation and a simple loaf pan, allowing it to be divided into slices even with just your hands, as it has a layered form, like a laminated bread. It’s perfect for breakfast, as a snack, accompanied by a good cup of tea or coffee.

Ingredients
- 3 cups all-purpose flour
- 1/3 cup granulated sugar
- 3.2 oz butter
- 1/4 cup brown sugar
- 1/3 cup milk
- 3 g active dry yeast
- 3.2 oz eggs (beaten)
- 1 tsp ground cinnamon
- 1 tsp salt
- 1 tbsp water
- powdered sugar (for decoration)
Preparation of sweet cinnamon bread
In a small saucepan, heat the milk with 60 g of butter cut into pieces until the butter is melted. Let it cool slightly.
Mix the flour with the granulated sugar and dry yeast.
Add the 90 g of beaten eggs (equivalent to about one and a half eggs, it’s best to weigh them) and the milk with the butter, then knead.
Add the water and salt and mix again until you have a homogeneous dough, then cover it and let it rise for about two hours, until doubled, in a draft-free place (the turned-off oven works well).At the end of this first rising phase, roll out the dough on a floured work surface to form a rectangle about 12 inches x 19.7.
Melt the remaining butter in a saucepan over low heat or in the microwave and brush it on the surface of the dough.
Mix the brown sugar and cinnamon and sprinkle it over the butter.Cut the rectangle into six equal strips and then stack them on top of each other.
Cut again into six equal parts.
Butter a loaf pan and place the dough pieces one behind the other until the pan is filled.
Cover with a kitchen towel and let rise for another thirty minutes.Preheat the oven to 347°F in static mode and bake your sweet cinnamon bread for forty-five minutes, making sure to cover the surface with a sheet of aluminum foil in the last fifteen minutes of baking.
Remove from the oven, let cool, and decorate as desired with a dusting of powdered sugar.
Notes
Cinnamon bread keeps well under a cake dome for a couple of days.
