Sweet Potato Parmigiana

Sweet potato parmigiana is a tasty main dish or single-course meal, easy to make and very delicious.

Sweet potatoes, or American potatoes, or yams, are tuberous roots different from regular potatoes, which are tubers. Sweet potatoes are rich in vitamins, particularly beta-carotene, contain more fiber and antioxidants, and have a lower glycemic index compared to potatoes.

Few simple ingredients, without pre-cooking the yams, thus keeping their nutritional values intact, and with a simple procedure for a tasty dish perfect for any occasion.

Ingredients

  • 17.6 oz sweet potatoes (or yams)
  • 8.8 oz mozzarella
  • 2.8 oz grated Parmesan
  • oregano
  • breadcrumbs
  • extra virgin olive oil
  • salt

Preparation of Sweet Potato Parmigiana

  • Peel the sweet potatoes and, with a smooth-bladed knife or a mandoline, cut them into very thin slices, a few millimeters thick.
    Cut the mozzarella into slices.
    Grease a baking dish.

  • Sprinkle it with breadcrumbs and lay down a layer of sweet potato slices leaving no empty spaces.
    Salt, sprinkle with Parmesan, a bit of mozzarella, a dash of oregano, and close with another layer of sweet potatoes. Repeat with salt, Parmesan, mozzarella, and oregano until the ingredients are finished, ending with mozzarella, Parmesan, and oregano.

  • Finish with a drizzle of extra virgin olive oil.
    Bake in a preheated static oven at 392°F for twenty-five minutes.
    Remove from the oven and let it cool slightly before serving your sweet potato parmigiana.
