Ingredients
- 1 1/2 cups rice (for risottos)
- 5 oz tomato paste
- butter
- cheese (grated)
- basil (fresh)
- extra virgin olive oil
- salt
Preparation of Tomato Paste Risotto
Place 1 quart of water in a saucepan, add the tomato paste, and heat on the stove, stirring until the paste is dissolved and the mixture is hot.
Heat a few tablespoons of extra virgin olive oil in a pot and toast the rice.
Cook it with the diluted tomato paste, adding it little by little, until the rice is cooked.Adjust the salt and toss your tomato paste risotto with butter and grated cheese to taste.
Serve it immediately, very hot, garnishing with some fresh basil leaves if desired.
