Ingredients
- 10.5 oz fresh cheese
- 15 cherry tomatoes
- 10 black olives (pitted)
- basil
- extra virgin olive oil
- salt
Preparation of Tomato Tartare with Fresh Cheese
Wash the cherry tomatoes, dry them, cut them in half and remove the seeds.
Dice them and collect them in a sieve placed over a bowl.
Salt them and let them rest to lose their excess water.Cut the cheese into cubes.
Clean the leaves of a small bunch of basil with dampened paper towels.
Put the diced cheese, the basil leaves broken by hand, the cherry tomatoes, and a drizzle of oil in a bowl and mix thoroughly.Place a pastry ring on a serving plate, pour the prepared mixture into it and compact it by pressing with the back of a spoon.
Keep the plate covered with some cling film in the refrigerator.
When it’s time to serve, remove the cling film and the pastry ring from the plate and serve your tomato tartare with fresh cheese.
