Trinacria pasta is a tasty main dish, easy and quick to prepare.
Its name comes from Sicily, called Trinacria by the Greeks because it features typical ingredients of this land. Quick to make, it is a perfect quick lunch or dinner solution.

Ingredients
- 11 oz pasta
- 1 red bell pepper
- 1 1/4 cups tomato purée
- 3 anchovy fillets
- 20 black olives (pitted)
- Half onion
- 1 clove garlic
- oregano
- basil
- extra virgin olive oil
- salt
Preparation of Trinacria Pasta
Bring a large pot of water to a boil for cooking the pasta.
Meanwhile, chop the onion and garlic.
Wash the bell pepper, remove the stalk, seeds, and filaments, and cut it into pieces.Sauté chopped onion and garlic in a large pan or wok with a base of extra virgin olive oil for a few minutes with the broken anchovy fillets, then add the chopped peppers and stir to flavor.
Add pitted black olives, a sprinkle of oregano, and adjust with salt.Let it cook for five minutes, stirring occasionally, then add the tomato purée, stirring again.
Cook the sauce for another ten minutes while also cooking the pasta al dente.
When the pasta is ready, drain it and add it to the sauce, mix thoroughly, and serve your Trinacria pasta with a sprinkle of grated pecorino cheese if desired and some basil leaves.
