Ingredients

  • 4.2 oz oil-packed tuna
  • 1 cup green olives (pitted)
  • 2 cups all-purpose flour
  • Half packet instant yeast for savory preparations
  • 3.4 oz water
  • 2 eggs
  • vegetable oil
  • salt

Preparation of Tuna Fritters

  • Place the well-drained tuna from the preservation oil in a blender with the olives and blend until you have a creamy and homogeneous mixture.
    In a large bowl, place the eggs with half a teaspoon of salt, the water, and 2 tablespoons of vegetable oil and mix with an electric mixer until everything is homogeneous.

  • Then incorporate the flour and the yeast for savory preparations, always mixing with the mixer.
    Finally, combine the tuna and olive mixture with a spatula.
    Heat abundant oil in a deep-edged pan.

  • Pour a tablespoon of batter for each fritter, cooking a few at a time, until golden, then remove them with a slotted spoon and let them dry of excess oil on a paper towel for fries or kitchen paper.
    Serve your tuna fritters immediately.
