Upside-Down Apple Cake

The upside-down apple cake is a delightful pantry cake, easy to make and very tasty.

Simple ingredients, lots of apples, but with lots of flavor for a perfect cake as a dessert, for Sunday lunch, or for a dinner with friends, delightful and pleasing to the eye and palate.

Ingredients

  • 3 apples
  • 2 eggs
  • 3/4 cups sugar
  • 1/4 cup vegetable oil
  • 1 2/3 cups all-purpose flour
  • 1/2 cup milk
  • 1 packet baking powder
  • 1 teaspoon vanilla extract
  • 4 tablespoons water
  • 3 tablespoons sugar
  • ground cinnamon

Preparation of the Upside-Down Apple Cake

  • First, prepare the syrup.
    In a small saucepan, place the water, the three tablespoons of sugar, and a bit of ground cinnamon and bring it to heat over low flame until the sugar dissolves.
    Turn off the heat and set aside.

  • In a large bowl, using an electric mixer, beat the eggs with the 3/4 cup of sugar and the teaspoon of vanilla extract until you get a light and fluffy mixture.
    Gradually add the vegetable oil, while continuously mixing with the beaters, then the flour, a little at a time, alternating with the milk and finally the baking powder.
    Line the bottom of a 9-inch springform pan with parchment paper.

  • Pour in the prepared syrup, reserving a few tablespoons.
    Peel the apples, remove the core and seeds, and cut them into thin slices.
    Place the slices on the syrup, slightly overlapping them to avoid empty spaces, and pour the prepared mixture over the apples.

  • Bake in a preheated static oven at 350°F (180°C) for forty-five minutes.
    Remove from the oven, let cool slightly, then turn your upside-down apple cake onto a serving plate and pour the reserved syrup over the surface.
    Let cool completely and serve.
