Ingredients

  • 10.5 oz ladyfingers
  • 17.5 oz mascarpone
  • 3 eggs (very fresh)
  • 5.3 oz sugar
  • 6.8 fl oz coffee (unsweetened)
  • 1.7 cups milk
  • unsweetened cocoa powder (for decoration)

Preparation of the upside-down tiramisu

  • Put the coffee in a saucepan with the sugar and bring it to the heat.
    Wait for a syrup to form, then turn off and set aside.
    Separate the yolks from the whites, placing them in separate bowls.
    Beat the egg whites until stiff, then slowly add half of the coffee syrup while continuing to whip with an electric mixer until a very thick mixture is obtained.

  • Also beat the yolks until they are well swollen and add the rest of the syrup slowly, continuing to whip with the mixer until completely incorporated.
    Add the mascarpone to the yolk mixture, mixing again with the mixer, then gently fold in the egg white mixture with a spatula, using delicate movements from bottom to top.

  • When your cream is well blended, transfer it to a piping bag with a flat nozzle and refrigerate for half an hour.
    After the resting time, soak the ladyfingers in cold milk and arrange them on a serving plate or tray.
    Decorate them with the cream arranged in a wave pattern, complete your upside-down tiramisu with a dusting of unsweetened cocoa powder, and serve.
