Ingredients
- 1 lb fennel
- 2 eggs
- 1/4 cup milk
- 3 oz cooked ham (diced)
- 3 oz fontina
- parsley (chopped)
- Parmesan (grated)
- extra virgin olive oil
- salt
Preparation of Valdostana Fennel
Clean the fennel and slice them thinly.
Blanch them in salted boiling water for five minutes, drain and set aside.
Cut the fontina into cubes.In a bowl, beat the eggs with a pinch of salt, then add two tablespoons of grated Parmesan, the milk, and some chopped parsley, and mix again.
Grease a baking dish with a little extra virgin olive oil.
Arrange the fennel slices, slightly overlapping them, until the entire surface of the baking dish is covered.Sprinkle with the diced ham and fontina.
Pour the egg mixture into the baking dish from one side to prevent the ham and cheese from sliding. Finish with some chopped parsley and a sprinkle of grated cheese, and bake in a preheated fan oven at 392°F for about twenty minutes, until golden.
Remove from the oven and serve your Valdostana fennel.
