Valdostana potatoes are a tasty side dish or second course that’s extremely easy to prepare.
A few simple ingredients, quick preparation and oven baking make this a perfect recipe for any occasion. It’s a delightful mountain comfort food made with humble ingredients like potatoes, enriched with Fontina, a typical Valle d’Aosta cheese with a strong flavor and melting texture, and with cooked ham, giving it a full, enveloping taste that makes it perfect as either a main dish or a side for meat mains.

Ingredients
- 1.1 lb potatoes (about 1.1 lb (500 g / about 18 oz))
- 3.5 oz Fontina cheese
- 3.5 oz cooked ham
- 0.85 cup milk (about 3/4 cup + 2 tbsp (200 ml))
- Grana Padano (grated)
- breadcrumbs
- rosemary
- extra virgin olive oil
- salt
Preparation of Valdostana Potatoes
Slice the Fontina into thin slices.
Peel the potatoes and cut them into thin slices.
Take a baking dish about 20 cm in diameter (approximately an 8-inch dish) and arrange a layer of potatoes in it.Season with a drizzle of extra virgin olive oil and salt, some Fontina, some ham and a little rosemary.
Make another layer of potatoes, oil and salt, Fontina, rosemary and ham and continue until the ingredients are used up, finishing with a layer of potatoes.
Season with oil and salt and then slowly add the milk from one side, so as not to move the potatoes.Sprinkle with some breadcrumbs and bake in a preheated conventional oven at 392°F for about 40 minutes, checking the potatoes’ doneness with a skewer which, when cooked, should easily pierce them.
If the surface darkens too much during baking, cover the dish with a sheet of aluminum foil.
Serve your Valdostana potatoes hot or cold, according to your taste and the season.
