Ingredients
- 21 oz veal slices (thin)
- 14 oz tomato puree
- 3.5 oz mozzarella for pizza (grated)
- 5.5 tbsp butter
- 1.4 fl oz white wine
- flour
- oregano
- salt
- pepper
Preparation of Veal Scallops Pizzaiola Style
Place the meat slices between two sheets of parchment paper and pound them with a meat tenderizer to make them as thin as possible, then flour them on all sides.
In a large pan, melt the butter over low heat, then salt and pepper.Add the slices, brown them on all sides, and as they are ready, transfer them to a well-covered plate to keep them warm.
Once the meat is cooked, pour the wine into the pan and let it evaporate, add the tomato puree, cover with a lid, and let it thicken for ten minutes over low heat.Add the reserved meat slices, sprinkle them with grated mozzarella and a bit of oregano, and cook covered until the mozzarella has melted.
Serve immediately, very hot, your veal scallops pizzaiola style.
