Ingredients

  • 6 slices of veal
  • 10.5 oz cherry tomatoes
  • flour
  • 1 tbsp brown sugar
  • mint
  • extra virgin olive oil
  • salt

Preparation of Veal Strips with Caramelized Cherry Tomatoes

  • Wash the cherry tomatoes and cut them in half.
    Place the veal slices between two sheets of parchment paper and pound them to thin them out (placing them between the paper will prevent the meat fibers from breaking).

  • Cut them into small pieces to create strips and flour them.
    Heat a drizzle of extra virgin olive oil in a large pan.
    Brown the strips on all sides over high heat, adjust the salt, then remove them and set aside.

  • Add the cherry tomatoes to the pan, season with salt, add the brown sugar, and the leaves of a sprig of mint.
    Stir, cover the pan with a lid, and reduce the heat.

  • Let it cook for five minutes, stirring occasionally, so that the tomatoes caramelize, creating a tasty cooking base.
    Add the strips, stir, and let them flavor for a few minutes, then turn off the heat.
    Serve your veal strips with caramelized cherry tomatoes, adding a few more mint leaves if desired.
