Veal tonnato in the pressure cooker is a tasty starter that is easy and quick to prepare.

Using the pressure cooker greatly reduces cooking time while still delivering a delightful dish with tender meat, perfect to be topped with a flavorful tuna sauce.

Ingredients

  • 1.8 lb veal eye of round (or maganello (another veal cut))
  • 1 onion
  • 1 carrot
  • 1 stalk celery
  • bay leaves (a few leaves)
  • 5.6 oz tuna in oil (drained)
  • 7 oz mayonnaise (about 3/4 cup + 2 tbsp)
  • 5 anchovies in oil
  • 2 tbsp capers
  • 2 tbsp white wine
  • salt

Preparation of veal tonnato in the pressure cooker

  • Peel the carrot and cut it into chunks.

    Wash the celery, trim the ends and cut it into pieces.

    Peel the onion and cut it into quarters.

    Gather the prepared vegetables in the pressure cooker.

    Tie the meat with kitchen twine and place it in the pot with a few bay leaves.

  • Season with salt and add enough water to reach the level marked in the pot.

    Close with the lid and leave the valve raised (some pressure cookers require the valve to be lowered: for correct use of your pressure cooker consult the user manual supplied with the pot) and bring to high heat.

    When it begins to whistle, close the valve and reduce the heat to the minimum.

    Let the meat cook for twenty minutes, then turn off the heat, wait until the pot stops bubbling and release the steam by raising the valve.

    Drain the meat and let it cool completely.

  • In the meantime prepare the tuna sauce.

    Drain the tuna from the preserving oil and put it in a food processor.

    Add the anchovies, capers and white wine and pulse the appliance until you obtain a smooth mixture.

    Transfer it to a bowl and blend it with the mayonnaise.

  • Slice the meat thinly and arrange the slices on a serving plate, slightly overlapping.

    Cover with the prepared tuna sauce and decorate your veal tonnato in the pressure cooker with a few capers.
