Vol au Vent with Mortadella

Vol au vent with mortadella are delightful appetizers, easy to make and irresistible.

The vol au vent are small puff pastry baskets of French origin: their name in French means flight in the wind, to indicate that they are very light. They generally have a savory filling, but there are also sweet versions.

The mortadella filling is made into a mousse with cheese, and they become extremely eye-catching when sprinkled with chopped pistachios and decorated, for example, as in the following recipe, with a mortadella star obtained using a small cookie cutter.
