Yogurt and Ricotta Cake

The yogurt and ricotta cake is a delicious pantry cake, very soft and easy to make.

A fluffy yogurt base enriched with a lemon-scented ricotta cream filling, perfect as a dessert but also for breakfast and snack time.

Ingredients

  • 4 eggs
  • 3/4 cup granulated sugar (about 150 g)
  • 1 cup ricotta cheese (about 250 g)
  • 2/3 cup Greek yogurt (plain (about 150 ml))
  • 1 3/4 cups all-purpose flour ("00" flour) (about 225 g)
  • 1/3 cup vegetable oil (about 75 ml)
  • lemon zest (finely grated from one lemon)
  • Half packet baking powder (about 2 teaspoons (half a standard Italian sachet))
  • powdered sugar (for decorating)

Preparation of the yogurt and ricotta cake

  • Beat three eggs with 3/4 cup (about 150 g) granulated sugar until the mixture is light and fluffy.

    Add the oil and the yogurt, continuing to mix, and finally fold in the sifted flour and baking powder.

  • Grease and flour a 22 or 24 cm diameter cake pan (approximately 9 in or 9 1/2 in) and pour in the prepared batter.

    In a bowl, place the well-drained ricotta, the finely grated lemon zest, the remaining egg and about 3 tbsp (25 g) powdered sugar and beat briefly with electric beaters until smooth and homogeneous.

    Transfer the ricotta mixture to a pastry bag fitted with a large plain tip and create a lattice of cream on the surface of the batter in the pan.

  • Bake in a preheated oven at 356°F (conventional/no-fan setting) for 30–35 minutes: do the toothpick test—inserted into the cake it should come out dry; if not, extend the baking time a little longer.

    Remove from the oven, let cool and dust your yogurt and ricotta cake with powdered sugar to taste before serving.
