Ingredients

  • 4 zucchini
  • 7 oz prosciutto
  • 1 clove garlic
  • rosemary
  • white wine vinegar
  • extra virgin olive oil
  • salt

Preparation of Zucchini and Prosciutto

  • Wash the zucchini, trim them, and slice them thinly lengthwise.
    Heat a grill or a griddle and cook the zucchini for a few minutes on each side.

  • Put four or five tablespoons of extra virgin olive oil in a small bowl or glass.
    Add a teaspoon of white wine vinegar, some chopped rosemary, the peeled garlic clove, and a pinch of salt, and emulsify everything with a fork.

  • Arrange the slices of zucchini alternating with the prosciutto slices on a serving dish.
    Drizzle everything with the prepared emulsion and serve your plate of zucchini and prosciutto.
