Zucchini Rings

Zucchini rings are delicious appetizers or finger food side dishes, easy to make and very tasty.

With simple ingredients, to be baked, air-fried, or deep-fried, they are perfect, for example, to enjoy with flavorful sauces, or to accompany meat, fish, or cheese dishes, for the whole family, on any occasion.

Ingredients

  • 3 zucchini (large)
  • 2 eggs
  • flour
  • breadcrumbs
  • pecorino cheese (grated)
  • extra virgin olive oil
  • salt

Preparation of Zucchini Rings

  • Wash the zucchini, dry them, and cut them into slices about 1/2 inch thick.
    Then, using a small cookie cutter or a pastry bag nozzle, cut out the inner part of each slice (set it aside for other preparations) to create the zucchini rings.

  • In a bowl, mix a few tablespoons of breadcrumbs with an equal amount of pecorino cheese (about three tablespoons).
    Place some flour on a plate.
    Beat the eggs with a pinch of salt.
    Bread the rings first in the flour, covering them well on all sides, then in the beaten eggs, and finally in the mix of breadcrumbs and cheese.

  • Place them on a baking sheet lined with parchment paper, drizzle with a little extra virgin olive oil, and bake in a preheated fan oven at 350°F for about twenty minutes until golden.
    Alternatively, you can fry them in plenty of vegetable oil or cook them in an air fryer at 320°F for ten to fifteen minutes, turning them halfway through, until golden.
