Today, that recipe has become mine, with a few personal touches: a bit of lemon zest for freshness, a pinch of cinnamon to wrap everything in an irresistible fragrance, and sweet, juicy apples that make each slice soft and moist just right.

Ingredients
- 3 apples
- 1 lemon
- 2 cups all-purpose flour
- 2 eggs
- 3/4 cup sugar
- 2/3 cup butter
- 1 pinch salt
- 1 packet baking powder
- 2 pinches ground cinnamon

Steps
Prepare the apples
Peel the apples, remove the core, and chop two of them into cubes. Slice the third apple into thin slices for decorating the top. Drizzle a bit of lemon juice over everything to prevent browning and set aside.
Prepare the batter
In a large bowl, beat the eggs with the sugar until the mixture is light and frothy. Add the melted, cooled butter, then add the milk and lemon zest.
Combine the dry ingredients
Sift the flour with the baking powder, add a pinch of salt and the cinnamon. Gradually incorporate the dry ingredients into the egg mixture, stirring with a spatula until smooth and homogeneous.
Add the apples
Fold in the cubed apples gently into the batter. Pour everything into a greased and floured 9.5-inch pan, leveling the surface.
Decorate and bake
Arrange the apple slices harmoniously on top and sprinkle a little brown sugar. Bake in a static or convection oven preheated to 320°F for about 40-45 minutes, until the cake is golden and a skewer inserted in the center comes out clean.
Cool and serve
Let the cake cool slightly in the pan, then transfer it to a wire rack. Serve at room temperature, possibly with a sprinkle of powdered sugar or a scoop of vanilla ice cream.
The apple pie stays soft for 2-3 days under a glass dome or well-covered at room temperature.
