Today that recipe has become mine, with a few personal touches: a bit of lemon zest for freshness, a pinch of cinnamon to wrap everything in an irresistible aroma, and sweet, juicy apples that make each slice soft and moist to perfection.

Ingredients
- 3 apples
- 1 lemon
- 2 cups all-purpose flour
- 2 eggs
- 3/4 cup sugar
- 2/3 cup butter
- 1 pinch salt
- 1 packet baking powder
- 2 pinches ground cinnamon

Steps
Prepare the apples
Peel the apples, remove the core, and dice two of them. Slice the third apple thinly to decorate the surface. Drizzle everything with a bit of lemon juice to prevent browning and set them aside.
Prepare the batter
In a large bowl, beat the eggs with the sugar until you get a light and fluffy mixture. Add the melted butter, now cooled, then add the milk and lemon zest.
Add the dry ingredients
Sift the flour with the baking powder, add a pinch of salt, and the cinnamon. Gradually fold the dry ingredients into the egg mixture, stirring with a spatula until you get a smooth and homogeneous batter.
Add the apples
Add the diced apples and gently fold them into the batter. Pour everything into a greased and floured 9-inch pan, leveling the surface.
Decorate and bake
Arrange the apple slices harmoniously on the surface and sprinkle with some brown sugar. Bake in a preheated oven at 320°F for about 40–45 minutes, until the cake is golden and a toothpick inserted into the center comes out clean.
Cool and serve
Let the cake cool in the pan, then transfer it to a wire rack. Serve at room temperature, perhaps with a dusting of powdered sugar or a scoop of vanilla ice cream.
The apple pie stays soft for 2–3 days under a glass dome or well covered at room temperature.
