Ingredients
- 4 cups all-purpose flour
- 1 whole egg
- 2 egg yolks
- 5.5 tbsps butter (or lard)
- 2 tbsps grappa (or white wine or marsala)
- 1 pinch salt
- 2 packets vanillin
- 1 qt oil (for frying)

Steps
1. Prepare the dough: In a large bowl, sift the flour and add the sugar, butter cut into pieces, eggs, a pinch of salt, vanilla extract, and liquor (if using). Start mixing the ingredients with a fork or your hands until you get a homogeneous mixture.
2. Knead: Transfer the dough to a floured surface and knead vigorously for about 10 minutes until smooth and elastic. If the dough is too sticky, you can add a bit more flour.
3. Rest: Form the dough into a ball, wrap it in plastic wrap, and let it rest in the refrigerator for at least 30 minutes. This step will help make the dough easier to roll out.
4. Roll out the dough: After resting, divide the dough into smaller portions. Roll each portion with a rolling pin until you get a thin sheet (about 1/16 inch thick). You can also use a pasta machine to facilitate this step.
5. Cut the fritters: With a pastry wheel, cut strips of dough about 2 inches wide and 4-6 inches long. Make a cut in the center of each strip and then fold the ends through the cut, forming a sort of knot.
6. Fry: Heat plenty of oil in a deep pan over medium-high heat. When the oil is hot (about 340-355°F), fry the fritters a few at a time, turning them until they are golden and crispy. It will take about 1-2 minutes per side.
7. Drain: Remove the fritters from the oil with a slotted spoon and place them on paper towels to remove excess oil.
8. Serve: Once cooled, sprinkle the fritters with powdered sugar and serve them on a nice plate. They are perfect to enjoy with a good coffee or hot chocolate!
