Cigarette paste is a very simple preparation used to create small decorations in pastry.
It can also be used to create wafers to decorate desserts and ice cream.
I mainly use it to make these designs on rolls or Swiss rolls of which I leave you the recipe and procedure here:
- Cost: Very cheap
- Preparation time: 10 Minutes
- Cooking methods: No cooking
- Cuisine: Italian
- Seasonality: All seasons
Ingredients
- 1 oz butter
- 1 oz powdered sugar
- 1 oz egg white
- 1 oz all-purpose flour
- as needed food coloring (in gel or powder)
Tools
- Small bowls
- Spatulas
- Piping bags
Steps
Not many utensils or tools are needed for the preparation of cigarette paste.
Take as many small bowls as the colors you need to make the design and an equal number of piping bags.
First, make sure the butter is soft, add the powdered sugar and dissolve the sugar well by stirring with a spatula.
Next, always mix the egg white and then the flour by stirring with the spatula.
You will get a batter that you can divide into the various small bowls.
Make a color for each small bowl. Take the small piping bags and insert the nozzles if necessary and put a color in each.
The recipe for the roll can also be found here on the Blog. Cream Roll
Search online for a drawing you like.
Print it on paper. Take the parchment paper on which you want to bake the roll and place the drawing underneath, place everything on a baking sheet.
It will show through from above and you will be able to trace it easily.
After you have completed your drawing, place the tray in the refrigerator for a few minutes.
In the meantime, prepare your roll.
Take the tray from the refrigerator and gently pour the roll batter over it.
Bake as per roll instructions.
