If you love cinnamon, you absolutely must try these soft coffee cinnamon rolls, a twist on the Swedish tradition.
Today, I present them to you with a unique coffee spin!

Ingredients
- 2 cups all-purpose flour
- 2/3 cup milk
- 1 egg yolk
- 2 tbsps sugar
- 3/4 tsp salt
- 1 tsp fresh yeast
- 3 tbsps butter
- to taste vanilla
- 3 tbsps butter
- 3 tbsps brown sugar
- 2 tsps ground cinnamon
- 1 tbsp instant coffee
- 1 pinch salt

Steps
Start by placing the milk, sugar, yeast, and egg yolk in the stand mixer with the paddle attachment.
Mix them well for a few minutes at medium speed. Then add flour and salt and continue mixing at medium speed.
Halfway through, after about 5 minutes, add the diced butter, salt, and flavorings (such as vanilla).
Continue kneading until you get a smooth and firm dough.
Place the cinnamon dough in a bowl to rise; it should grow but not double.
To knead the cinnamon rolls with a Thermomix, start with the milk, yeast, and sugar, and mix for 3 minutes at 98°F (37°C) at speed 3.
Then add all other ingredients and knead for about 5 minutes on the dough setting.
It might take a few more minutes. Knead until the dough is smooth and firm.
Place the cinnamon dough in a bowl to rise; it should grow but not double.
Now, proceed with forming the cinnamon muffin.
Prepare the filling: mix all the ingredients, i.e., sugar, butter, instant coffee, and cinnamon in a bowl with a spoon.
Then take the dough and place it on a table or board. Use a rolling pin to roll it out to about 1 or 2 mm thick.
Take the filling with a spoon and spread it over the entire surface of the rolled-out dough.
Fold one side of the rolled-out dough over the other.
Cut into strips
Braid 4 strips
After braiding the 4 strips for the second time, fold them over themselves to form a knot. Place each knot in the cavity of the muffin pan.
Let rise almost to double size at around 75°F, preferably in the oven with the light on or in a sheltered spot.
Once the cinnamon rolls muffins have nearly doubled in size, preheat the oven to 340°F and bake them.
Bake for about 15/18 minutes.
Remove from the oven, let cool, and enjoy!
These coffee cinnamon roll muffins keep well covered for a couple of days.
