Preparation
Let’s start with the preparation of the ladyfinger cookies
To prepare our ladyfingers, separate the egg whites from the yolks and place the egg whites with half the sugar in the bowl of a stand mixer or electric beater, and whip to stiff peaks.
Next, whip the yolks with the remaining sugar.
Then incorporate the yolk and sugar mixture into the egg white and sugar mixture, being careful not to deflate them.
Sift the cornstarch and flour together.
Now, set aside the tools and gently fold the cornstarch and flour into the mixture by hand using a soft spatula, mixing from bottom to top to avoid deflating the mix.
Take our pastry bag and insert the plain tip no. 10; fill it with the obtained mixture.
With the help of the pastry bag, pipe the mixture onto a tray lined with parchment paper, trying to create sticks about 3 to 4 inches long, well-spaced from each other.
Sprinkle generously with powdered sugar and bake at 340°F for about 12/15 minutes.
Storage
Classic ladyfingers can be perfectly stored in a metal box for about 15 days
