Ingredients
- 2 cups all-purpose flour
- 1/2 cup butter
- 3/4 cup powdered sugar
- 1 egg
- 1 pinch salt
- vanilla flavor
- 1 1/4 cups shredded coconut
- 7 oz Nutella®

Steps
Prepare the shortcrust pastry:
In a bowl, mix the flour, sugar, and pinch of salt. Add the cold butter cut into cubes and work with your fingertips or a mixer until you get a sandy mixture.
Add the egg and vanilla extract, and knead quickly until you form a smooth dough. Wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
Roll out the dough:
After resting, roll out the dough on a lightly floured surface to a thickness of about 1/8 inch.Shape the cookies:
Use a round or desired shape cookie cutter to cut out the cookies.
Place them on a baking tray lined with parchment paper.
Bake:
Preheat the oven to 350°F (if the oven is fan-assisted, 320°F)
Bake the cookies for about 12-15 minutes, or until the edges are lightly golden.Cool and enjoy:
Let the cookies cool on a wire rack before filling them.Add the filling:
On half of the cookies, spread a teaspoon of Nutella in the center.
Cover with another cookie, pressing gently on the edges to seal the filling well.Roll the cookies in shredded coconut.
Dust with powdered sugar.
They taste even better at room temperature!
You can decorate the cookies with powdered sugar or melted dark chocolate for an extra touch of indulgence. If you prefer, you can also use a piping bag to distribute the Nutella more precisely.
