Ingredients

  • 1 tablespoon soy flour
  • 2 tablespoons water
  • 7 tablespoons vegetable margarine (or vegan butter)
  • 2 cups wheat flour
  • 3 tablespoons honey
  • 1/3 cup brown sugar
  • 1 tablespoon cocoa powder
  • 1 tablespoon spices (peppery)
  • Half packet
  • 1 teaspoon egg white substitute
  • 3/4 cup powdered sugar

Steps

  • Prepare the dough
    In a large bowl, sift the flour together with the baking powder, spices, and salt. Mix well with a whisk.
    Add honey, sugar, and margarine to the center of the bowl.
    Mix with a spoon or your hands until the ingredients start to combine.
    If necessary, add a little water or plant-based milk to achieve a soft but not sticky dough.
    💡 Tip: work the dough as little as possible to avoid over-developing the gluten.

  • Rest the dough
    Form a ball with the dough, wrap it in plastic wrap and let it rest in the refrigerator for about 30 minutes. This will make the dough easier to roll out.

  • On a lightly floured surface, roll out the dough with a rolling pin to a thickness of about 1/8 inch
    Use Christmassy shapes (men, stars, trees…) to cut out the cookies.
    Transfer the cookies onto a baking tray lined with parchment paper leaving a little space between each.

  • Baking
    Preheat the oven to 320°F (fan-assisted).
    Bake the cookies for 10–12 minutes or until the edges are just golden.
    Once baked, let them cool completely on a rack: they will become crispier as they cool.

  • If you want to decorate them:
    Prepare a vegan glaze by mixing powdered sugar with a little lemon juice or water until you get a smooth consistency or with the vegan egg white substitute.
    Transfer it to a piping bag or use a teaspoon to draw Christmas patterns on the cookies.

You can increase or decrease the spices according to your taste.

If you want more fragrant cookies, add a pinch of cloves or nutmeg to the same dough.

Store the cookies in an airtight container for up to a week
