  • Difficulty: Very easy
  • Cost: Very cheap
  • Preparation time: 30 Minutes
  • Portions: 12
  • Cooking methods: Oven, Electric oven
  • Cuisine: Italian
  • Seasonality: All seasons

Ingredients

  • 7 oz Gluten-free flour
  • 3/4 cup granulated sugar
  • 3 eggs (whole)
  • 1/2 cup butter
  • 1/2 cup milk
  • 1/2 cup unsweetened cocoa powder, gluten-free
  • 1 packet gluten-free baking powder
  • 1 pinch salt

Tools

  • 1 Electric whisk
  • 1 Springform pan

Steps

  • Classic Method

(beat the eggs and sugar with an electric whisk or in a stand mixer)

Prepare the ingredients: Make sure all ingredients are at room temperature. Preheat the oven to 320°F and line a cake pan about 8-9 inches in diameter with parchment paper or lightly butter it.
Mix the dry ingredients: In a bowl, sift together the gluten-free flour, cocoa powder, baking powder, and pinch of salt. Mix well to distribute evenly.
Beat the eggs: In another bowl, whisk the eggs with sugar and vanilla extract until light and frothy.
Add butter and milk: Add the softened butter to the beaten eggs and mix well. Then, gradually add the milk, continuing to mix.
Incorporate the dry ingredients: Gradually add the dry ingredients to the wet mixture, gently folding with a spatula or wooden spoon, until you have a smooth and lump-free batter.
Pour into the pan: Transfer the batter into the cake pan and level the surface with a spatula.
Bake: Bake in the preheated oven at 320°F for about 35-40 minutes. To check for doneness, insert a toothpick in the center: if it comes out clean, the cake is ready.
Cool and decorate: Remove the cake from the oven and let it cool completely on a wire rack.

You can fill it with chocolate cream, whipped cream, or decorate it with grated dark chocolate, powdered sugar, or whatever you prefer.

Here are some friendly tips on how to best store your Moretta cake to keep it fresh and delicious for longer.
Room temperature storage:
If you plan to consume it within 1-2 days, you can leave it covered with a plate or a glass dome at room temperature. Make sure it is well covered to prevent it from drying out or absorbing external odors.
In the fridge:
For longer storage, you can wrap the cake with plastic wrap or put it in an airtight container and store it in the fridge. This way, it will stay fresh for about 3-4 days. Remember to take it out a few minutes before serving, so it will be softer and more flavorful.
Freezing:
If you want to keep it for longer, you can also freeze it. Wrap the cake well with plastic wrap and then place it in a freezer bag or an airtight container. It can be stored for up to 2-3 months. When you want to enjoy it, let it thaw in the fridge or at room temperature, covered, for a few hours.
Final tip:
If the decoration includes cream or fresh cream, it is best to consume it within 1-2 days and store it in the fridge. If it is decorated with chocolate or powdered sugar, it can last a bit longer.

Tip: For an even more indulgent version, you can add gluten-free chocolate chips to the batter or decorate the surface with fresh fruit.
