  • Cooking methods: Oven, Electric oven
  • Cuisine: French
  • Seasonality: All seasons

Ingredients

  • 3 whole eggs
  • 6 oz granulated sugar
  • 2 1/4 cups all-purpose flour
  • 1/2 cup butter
  • 1/2 cup milk
  • 1 tsp baking powder
  • 2 tbsp wildflower honey
  • 1 tsp lemon zest

Tools

  • 1 Electric whisk
  • 1 Mold

Steps

  • Procedure:

    Prepare the butter:
Melt the butter in a saucepan over low heat or in the microwave (try not to burn it), then let it cool slightly.
    Whisk the eggs:
In a large bowl, beat the eggs with the sugar and a pinch of salt until you get a light and frothy mixture. You can use an electric whisk to make the work easier.
    Add the honey:
Add the honey to the egg and sugar mixture, mixing well until you get a homogeneous mixture.
    Incorporate the dry ingredients:
Sift the flour with the baking powder and lemon zest (if used). Gradually add the dry ingredients to the mixture, gently mixing with a spatula or wooden spoon.
    Add the butter:
Pour the melted and cooled butter into the mixture, gently mixing to combine all the ingredients well.
    Rest in the refrigerator:
Cover the bowl with plastic wrap and let the batter rest in the refrigerator for at least 30 minutes (even overnight). This will help achieve the typical madeleine shape.
    Prepare the molds:
Preheat the oven to 340°F. Butter and flour the madeleine molds or use non-stick silicone ones.
    Fill the molds:
Pour the batter into the molds, filling them about 3/4 full. You can use a pastry bag for more precise filling.
    Baking:
Bake the madeleines for about 10-12 minutes, or until golden at the edges. The surface should be slightly puffed and shiny.

Madeleines are quite easy to store and maintain their goodness if you follow some simple tips.

You can store them in a tin box or an airtight container at room temperature, in a cool and dry place. This way, they will remain soft and fragrant for about 2-3 days.

To keep them longer, you can also put them in an airtight container and store them in the refrigerator, although they might lose a bit of softness.

If you prefer to enjoy them as if they were freshly made, you can heat them slightly in the oven for a few minutes before serving them, so they become soft and delicious again!
