Ingredients

  • 1 1/4 cups digestive biscuits
  • 1/3 cup butter
  • 2 lbs cream cheese
  • 1/3 cup heavy cream
  • 1/2 cup sugar
  • 2 whole eggs
  • 1 egg yolk
  • to taste vanilla essence
  • 1 cup mixed berries
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar

Steps

  • . Prepare the base
    1.1. Finely grind the digestive biscuits in a mixer until they turn to powder.
    1.2. Add the butter, mix well until you get a sandy mixture.
    1.3. Pour the mixture into a 8-inch springform pan, previously lined with parchment paper.
    1.4. Press down with the back of a spoon or a glass, forming a small edge on the side.
    1.5. Place in the fridge for at least 30 minutes, or in the freezer for 15 minutes.
    2. Prepare the cream
    2.1. In a large bowl, blend the cream cheese with the sugar until you get a smooth cream.
    2.2. Add the whole eggs one by one, then the yolk, mixing well after each addition.
    2.3. Stir in the vanilla extract, lemon zest, and fresh cream.

    3. Baking
    3.1. Pour the cream over the now cold base.
    3.2. Level the surface with a spatula.
    3.3. Bake in a preheated static oven at 320°F for about 40 minutes.
    3.4. After the time, the cheesecake should still be slightly wobbly in the center: it’s normal!
    3.5. Turn off the oven, leave the door slightly open, and let the cheesecake cool completely inside.

    4.3. Store in the fridge for at least 4 hours, better if overnight.
    5. Serve
    5.1. Gently remove the cheesecake and transfer it to a serving plate.
    5.2. Garnish as desired with fresh berries, strawberry coulis, or a simple dusting of powdered sugar.

Storage
The New York Cheesecake can be stored in the refrigerator, covered with plastic wrap or in an airtight container, for a maximum of 3-4 days.
It is important to keep it well refrigerated, especially if decorated with cream, fresh fruit, or creamy toppings.
You can also prepare it a day in advance: resting in the fridge will make it even more compact and flavorful!

Yes! The cheesecake can be frozen without the topping:
Wrap it well with plastic wrap and then in foil, or place it in a freezer-safe container.
It can be stored for up to 2 months.
To enjoy it at its best, let it thaw slowly in the refrigerator for at least 8 hours (better overnight), then add the topping or decoration only when serving.
