Ingredients
- 1 3/4 cups all-purpose flour
- 1 pinch salt
- 5 1/2 tbsp butter
- 2/3 cup sugar
- 1 tbsp milk
- 1 egg (whole)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tbsp unsweetened cocoa powder
- 1/2 cup dark chocolate chips
- as needed red food coloring
Tools
- 1 Bowl
- 1 Baking sheet
- 1 Parchment paper
Steps
To prepare red velvet cookies, start by working the softened butter with sugar (white or brown) in a bowl until you get a light and fluffy cream.
Add the egg and vanilla extract, then mix well to combine the ingredients.
Gradually add the red food coloring, mixing until you obtain a uniform color. Then add the sifted unsweetened cocoa and mix again.
In a separate bowl, sift the flour with the baking powder and a pinch of salt.Combine the dry ingredients with the mixture, gently mixing until you get a soft and homogeneous dough. If desired, finally add the chocolate chips or white chocolate pieces.
Cover the dough with plastic wrap and let it rest in the refrigerator for 30 minutes: this step will help the cookies maintain their shape while baking.
After the resting time, form dough balls and place them on a baking sheet lined with parchment paper, spaced apart. Gently flatten them with your fingers.
Bake in a preheated static oven at 340–350 °F for 12–15 minutes. The cookies should be slightly cracked on the surface and still soft in the center.
Remove them from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack. Once cool, the red velvet cookies are ready to enjoy. ❤️🍪
The red velvet cookies keep perfectly at room temperature for 3–4 days, stored in an airtight container or a tin box, away from heat and humidity. This way they will retain their fragrance and inner softness.
If you prefer to keep them longer, you can freeze the already baked cookies: let them cool completely, place them in a food bag or a suitable freezer container and store them for up to 2 months. Just let them thaw at room temperature to enjoy them as fresh as new.
Alternatively, you can also freeze the raw dough, already portioned into balls, for about 1 month. When using, bake the cookies directly from frozen, slightly extending the baking times.
