Steps

  • To make the royal icing mixture, I prefer to use the stand mixer, but regular electric whisks are also fine.

    Place the egg whites, powdered sugar, and any flavorings in the mixer bowl and use the paddle attachment.

    Start mixing at medium speed for about 10 minutes, ensuring the sugar is fully dissolved and well blended.

    The consistency is medium.

    If you want it thicker, just add more powdered sugar.

    If you want it thinner, add a little water.

    Place the mixture in a piping bag and decorate cookies or other items.

    It will take a couple of hours for the mixture to dry well and become hard to the touch.

Royal icing should be stored for two days in a container in the refrigerator and must be covered with a damp cloth or napkin and perfectly sealed with plastic wrap. If it dries and forms lumps, it can no longer be used.
