Ingredients
For the dough:
- 12 oz all-purpose flour
- 5 oz Manitoba flour
- 4 tbsp extra virgin olive oil
- 3 tbsp granulated sugar
- 2 tsp salt
- 0.7 oz fresh yeast
- 1 cup lukewarm water
- to taste tomato sauce
- to taste mozzarella
- to taste basil
- to taste oil
- 1 pinch salt

Steps
1. Prepare the dough: In a large bowl, mix the flour with the yeast and sugar. In another bowl, combine the lukewarm water with the oil and salt. Pour the liquid mix into the flour and start kneading until you get a smooth and homogeneous mixture.
You can also knead with a stand mixer using the hook or paddle attachment or with a Thermomix (using the knead function for 5 minutes)
2. Rising: Cover the dough with a cloth and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
3. Shape the mini pizzas: Once risen, roll out the dough on a floured surface to a thickness of about 0.4 inches.
Use a round cutter or a glass to cut out dough circles.
Alternatively, form balls with your hands, about 0.7 oz each.
4. Top: Place the discs on a baking sheet lined with parchment paper.
Let them rise again for about an hour and then flatten them with your hands.
Add a tablespoon of tomato sauce on each mini pizza, a piece of mozzarella, and if you like, a pinch of oregano.
5. Bake: Preheat the oven to 338°F and bake the mini pizzas for about 15 minutes, or until golden and puffed.
6. Serve: Take the mini pizzas out of the oven and let them cool for a few minutes. Serve them hot and enjoy with friends and family!
You can customize your mini pizzas with your favorite ingredients: peppers, mushrooms, salami, or even a touch of pesto!
– If you want an even softer result, try replacing part of the flour with Manitoba flour.
– You can freeze your mini pizzas and then bake them in a hot oven when ready to serve.
