Ingredients

  • 2 cups spelt flour
  • 2 cups Manitoba flour
  • 1/2 cup milk
  • 1/2 cup water
  • 2 tsp salt
  • 1/4 cup sugar
  • 2.8 oz butter
  • 10 g fresh yeast (or 3 g dry yeast)
  • 1 tsp honey
  • 1 oz egg yolk
  • 1 whole egg
  • 4 tsp milk
  • sesame seeds

Steps

  • 1. Activate the yeast: If using dry yeast, mix it with warm water and sugar in a bowl. Let it sit for about 10 minutes until it foams. If using fresh yeast, dissolve it directly in the water and milk.

    2. Prepare the dough: In a large bowl, sift the spelt flour and add the salt. Make a well in the center and pour in the water with the yeast and the yolks. Start mixing with a wooden spoon or with your hands until you get a homogeneous dough, also incorporating the soft butter in pieces.

    If using a stand mixer, you can put the yeast and liquids together with flour and start kneading with the flat beater.

    3. Knead: Transfer the dough to a floured surface and knead for about 10 minutes, until it becomes elastic and smooth. If the dough is too sticky, you can add a little flour, but be careful not to overdo it.

    If using a stand mixer, continue mixing and add the butter in pieces gradually. Your dough will be ready when it’s smooth and firm.

    4. Leavening: Shape the dough into a ball and place it in a lightly greased bowl. Cover with a damp cloth or plastic wrap and let it rise in a warm place for about 1-2 hours, or until it doubles in size.

    5. Form the rolls: Once risen, deflate the dough and divide it into portions of about 20-30 g. Shape them into balls and place them on a baking sheet lined with parchment paper, leaving some space between them.

    6. Second leavening: Cover the rolls with a cloth and let them rise for another 30-40 minutes. Or place the baking sheet in the oven with the light on.

    7. Preheat the oven: While the rolls are rising, preheat the oven to 340°F.

    8. Baking: Before baking, you can brush the rolls with some water or oil for a more golden crust or with the yolk and milk. Add the seeds you prefer on top.

    Bake the rolls for about 15-20 minutes, or until they are golden and sound hollow when tapped on the bottom.

    9. Cooling: Remove the rolls from the oven and let them cool on a rack.
