Ingredients
Let’s start preparing the ingredients
- 1 cup Mascarpone
- 1 cup Cream cheese (like Philadelphia)
- 3.5 tbsps Fresh heavy cream
- 2.25 tbsps Honey
- 2/3 cup Fresh heavy cream (lightly whipped)
- 1 tsp Gelatin sheets
- 1.75 tbsps Water
- 7 oz Digestive biscuits
- 1/2 cup Butter
- 1 cup Strawberries
- 2 tbsps Sugar (granulated)
- 1 1/2 Lemon (juice)

- 1 Electric whisk
- 1 Cake pan 9-10 inches in diameter with removable ring
- 1 Saucepan
- 1 Immersion blender
Preparation
Let’s start…
Let’s start preparing the cheesecake base.
Take the 7 oz of digestive biscuits and crush them into a powder. This can be done by hand with a meat tenderizer or in a food processor.
Melt the butter in a saucepan and add the finely crushed biscuits. Mix thoroughly until all the butter is absorbed. Pour the mixture into the cake pan and press it down evenly with your hands. Place in the fridge to solidify.
Now let’s move on to preparing the filling.
Whip the cream (cold from the fridge) but not excessively. It should be lightly whipped. Set aside; place mascarpone and cream cheese in the bowl and mix them well together.
Soak the gelatin sheets in cold water.
In the meantime, slightly warm 3.5 tbsps of cream with the honey and add the well-drained gelatin sheets to dissolve.
Carefully combine this mixture with the previously prepared mascarpone and cream cheese mixture.
Finally, gently fold in the lightly whipped cream.
Pour the filling into the cake pan that we left in the fridge.
Put the washed and chopped strawberries in a saucepan with the lemon and sugar.
Cook for about 15 minutes. Then blend with an immersion blender.
Once it’s almost cold, it can be poured over the cheesecake.
Decoration
The cheesecake can be decorated with fresh fruit, in this case, strawberries or berries.
Variations
It’s possible to replace mascarpone with Greek yogurt.
