Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 cup erythritol
  • 7 tbsps butter (or vegan butter or coconut oil)
  • 1 egg (yolk only)
  • to taste vanilla extract
  • 1/2 baking powder
  • 1 oz chocolate chips
  • 1 pinch salt

Steps

  • Prepare the ingredients:
    Make sure the butter is cold and cut into cubes. If using coconut oil, ensure it is solid but soft.
    Mix the dry ingredients:
    In a bowl, combine the flour, powdered erythritol, salt, and if desired, lemon or orange zest.
    Incorporate the butter:
    Add the cold butter cubes and work with your fingers or a fork until you get a sandy, crumbly mixture.
    Add the egg and flavors:
    Make a well in the center and pour in the egg and vanilla extract. Mix with a spatula or your hands until you get a homogeneous dough. If the dough is too sticky, add a little flour; if too crumbly, add a teaspoon of cold water.
    Form a ball:
    Transfer the dough onto a lightly floured surface and compact with your hands to form a ball. Wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
    Roll and cut:
    After resting, roll out the dough to about 0.2 inches thick. Use cookie cutters to cut out desired shapes.
    Bake:
    Preheat the oven to 340°F. Arrange the cookies on a baking tray lined with parchment paper and bake for about 12-15 minutes, or until the edges are lightly golden.
