Tart with Oat Flour

Today I want to share with you a recipe that combines tradition and health: the tart with oat flour. This dessert is perfect for those looking for a lighter and more nutritious alternative to the classic tart, without sacrificing taste. Oat flour, in fact, is rich in fiber and nutrients, making this tart not only delicious but also a healthier option for your snacks or breakfasts.

Ingredients

  • 7 oz sugar
  • 9 oz butter
  • 3 eggs
  • 3 1/2 cups spelt flour (white)
  • 1 cup oat flour
  • 1 tbsp baking powder (for desserts)
  • orange flavoring
  • 10 1/2 oz blueberry jam
  • A few fresh blueberries

Steps

  • 1. Dough: in a bowl, mix the flours with the baking powder and a pinch of salt. Add the cold butter in pieces and work with your fingers until you get a crumbly mixture. Add the sugar, the egg, and lemon zest, and knead until you form a smooth ball.

    2. Rest: Wrap the dough in plastic wrap and let it rest in the refrigerator for at least 30 minutes. This step is essential for achieving a crumbly pastry.

    3. Roll out the dough: Preheat the oven to 350°F. Roll out the dough on a floured surface until it is about 3/16 inch thick. Transfer the base into a pie dish (preferably springform) and prick the bottom with a fork.

    4. Add the filling: Spread the jam evenly over the base of the tart. If desired, you can add slices of fresh fruit on top of the jam for an extra touch of freshness.

    5. Decorate: With the leftover dough, you can create strips to decorate the surface of the tart, forming a classic lattice pattern. I added fresh blueberries in the lattice.

    6. Baking: Bake the tart for about 30-35 minutes, or until golden. Once baked, let it cool in the pan.

    Remove it from the pan and sprinkle with plenty of powdered sugar! Your tart is ready to be served!

You can customize the tart filling with nuts, dark chocolate, or pastry cream to vary the flavors and many other types of fruit jams.
