I find apples to be flavorful and light fruit, versatile, suitable for making both sweet and savory dishes. For this delicious and soft Apple Cake, I wanted to use apples in the dough, but I also added apple slices, arranging them in concentric circles starting from the outside and ending in the center of the pan.

Ingredients
- 14 oz Apples
- 3.4 oz Milk
- 1.6 cups Flour
- 0.75 cups Sugar
- 3 Eggs
- 2 Apples about 7 oz each
- 2 tbsp Brown sugar
- 2 tbsp Concentrated lemon juice
- 1 packet Baking powder for cakes (16g)
- to taste Butter spray (baking release spray)
Preparation
In a bowl, beat the eggs with the sugar using a whisk, add the milk and beat again thoroughly.
Add the sifted flour and baking powder to the egg mixture and continue to mix with the whisk.
Wash, peel, and dice the 14 oz of apples very finely (I used a mixer to chop them coarsely).
Add the chopped apples to the flour mixture and mix well with the whisk.
Grease a 10-inch pan with butter spray, flour it, and pour in the apple mixture.
Wash, peel, quarter, and then thinly slice the 2 apples, about 7 oz each.
Insert the slices into the mixture, trying to form concentric circles starting from the outside and finishing at the center of the pan.
Spray some concentrated lemon juice over the apples and sprinkle the surface with brown sugar.
Bake at 350°F for 35–40 minutes.
Notes
The slices should be quite thin; I cut them with a knife, but if you have a mandoline it will certainly make the task easier.
If you like, you can sprinkle some cinnamon on the surface of the cake.
