Apple Roses and Shortcrust Pastry

The apple roses and shortcrust pastry are truly delicious cookies and very beautiful to look at. You can prepare really suggestive and exquisite bouquets to gift to your loved one or anyone you wish to impress.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups cornstarch
  • 9 tbsp butter
  • 3/4 cup powdered sugar
  • 2 large egg whites (the egg whites from about two medium eggs)
  • 2 apples (red, about 5 oz each)
  • 1/2 lemon juice (the juice of half a lemon)
  • as needed fig jam (or another flavor you like)
  • as needed wafer paper (leaves for decoration)
  • as needed honey (to attach the wafer leaves)

Steps

  • Prepare the egg white shortcrust pastry (if you prefer, you can also use the classic one) following the recipe you find here. Let it rest in the fridge for about half an hour.

  • Meanwhile, wash the apples thoroughly (it would be better to use organic apples as you will not have to peel them), cut them in half lengthwise, remove the core, and use a vegetable peeler to cut thin slices. Place the slices in a bowl covered with water where you have squeezed the juice of half a lemon (to prevent them from turning dark).

  • Divide the shortcrust pastry into 12 parts, about 2.6 oz each, and wrap them in plastic wrap to prevent them from drying out. On a well-floured surface, roll out a piece of pastry and cut with a pizza cutter into a rectangle measuring about 12×2 inches.

  • Spread a little jam on top, then arrange the half apple slices, but first blot them slightly with a kitchen towel. Fold the bottom half over, covering part of the apples with the pastry. Roll up gently, as this shortcrust pastry is very fragile.

  • Bake at 350°F for about 25 minutes.

    To give the idea of a bouquet of flowers, take a wooden skewer, you can color it green with food dyes, and insert it into the bottom of the flower, not too deep, or the tip may come out. Add wafer leaves to complete the bouquet, using honey to attach them.
