The baked brown rice timbale is definitely a tasty dish that usually pleases the whole family. For this main course, I chose cooked ham and guanciale, which make it even more appetizing. Brown rice has a quite long cooking time, about 30 minutes, but it gives a more rustic flavor that we really like.

Ingredients
- 1 1/4 cups brown rice
- 2 cups milk
- 3 cups water
- 3.5 oz guanciale
- 5.3 oz cooked ham
- 5.8 oz stracchino
- 4.4 oz mozzarella
- 5 eggs
- 2 tablespoons Parmigiano Reggiano DOP (grated)
- as needed olive oil
- 1 teaspoon coarse salt
- 1 onion (small)
Preparation
Put the milk and water in a pot, bring to a boil, add the coarse salt and brown rice. Cook for about half an hour, until all the liquid is absorbed.
In a pan, heat a little olive oil and sauté the finely chopped onion, add the diced cooked ham and guanciale and brown for about 5 minutes. Add the stracchino and let it melt. Add the rice without draining it into the pan and let it dry slightly.
In a bowl, combine the seasoned rice, diced mozzarella, and beaten eggs. Mix well and then place the mixture in a 28 cm baking pan lined with previously dampened parchment paper.
Sprinkle the surface with two tablespoons of grated Parmigiano. Bake in the oven at 350°F for about 35 minutes.
Tips/Advice
Of course, you can use the ingredients you like best, such as prosciutto, mortadella, Emmenthal cheese, or smoked scamorza, according to your personal taste.
