- Cost: Cheap
- Rest time: 12 Hours
- Preparation time: 30 Minutes
- Portions: 4 people
- Cooking methods: Oven
- Cuisine: Italian
Ingredients
- 4.4 lbs Portioned Lamb
- 6 leaves Bay Leaves
- 2 sprigs Rosemary
- 1 sprig Sage
- to taste Fine Salt (6/7 pinches)
- 1 lemon
Preparation
If you want to reduce the strong taste of lamb, you can marinate it in a bowl overnight. Cover it with water in which you have added the herbs (rosemary, sage, bay leaves). Wash a lemon, cut it in half, squeeze it into the water where you have soaked the lamb, and also put the peel in the marinade.
After the resting time, put some oil in a pan with a diameter of 12 inches, drain the pieces of lamb from the marinade water and place them inside with fresh herbs (not the ones from the marinade) and a little salt.
Bake in the oven at 320°F for about an hour, then raise the temperature to 390°F for another 30 minutes.
Stir occasionally with a wooden spoon.
Tips/Advice
The marinade is optional; you can skip it if you prefer a stronger taste.
