You cannot consider ‘Baked Pasta with Cauliflower and Sausage’ a diet or light dish. It is definitely a hearty recipe, more suitable for eating in winter. A recipe with which you can recycle leftover pasta or use as a fridge cleaner!

Ingredients
- 1.5 lbs Cauliflower (boiled)
- 7 oz Smoked bacon (diced)
- 7 oz Sausage
- 5 oz Smoked scamorza cheese
- 12 oz Rigatoni
- 1 cup Cooking cream
- 1 oz Grated Parmesan cheese
- 1 pinch Black pepper
- 1 tsp Chili pepper
- 1 clove Garlic
- 1 tsp Olive oil
- 1 tsp Fine salt
Preparation
Sauté the boiled cauliflower cut into pieces in a pan with oil and garlic.
Add the bacon and crumbled sausage, the chili pepper and cook for 10 minutes.
Put the water for the pasta, once it boils add the salt and pasta, which you should drain very al dente.
Put the pasta in the pan with the vegetables and mix the ingredients well.
Add the cream and pepper, if too dry also a bit of pasta cooking water (or milk).
Place the mixture in a rectangular baking dish previously greased with a little oil, add the diced scamorza cheese and grated Parmesan.
Bake at 392°F for 10 – 15 minutes.
Notes
Instead of rigatoni, you can use your preferred pasta shape.
