Baked Potatoes, Onions, Tomatoes, and Feta

Do you want to offer potatoes in a slightly alternative way? Try this Baked Potatoes, Onions, Tomatoes, and Feta recipe, and you’ll see its taste won’t disappoint you! I find it to be an excellent side dish for flavorful dishes, such as sausage, or if you prefer, prepare a little more and enjoy it with some good bread.

Ingredients

  • 2.2 lbs Potatoes with skin
  • 7 oz Onions about 2 medium onions
  • 14 oz Tomatoes about 4 medium tomatoes
  • 3.5 oz Feta
  • 2 tablespoons Dried oregano
  • to taste Fine salt
  • to taste Olive oil

Preparation

  • Wash, peel, and cut the potatoes into pieces not too small.

    Clean the onions and cut them into wedges.

    Also, wash the tomatoes, dice them, and lightly salt them.

    Place the vegetables in a baking pan with a diameter of approx. 12 inches, add fine salt, oil, oregano, and mix well to season all the ingredients.

    Grate half of the feta using the grater you use for lemon peel, mix again.

    Bake at 356°F for about 60 minutes.

    At the end, if it is still slightly watery, let it dry by placing the pan on the oven base for a few minutes.

    Add the remaining grated feta and roast for a few minutes.
