  • 1.1 lbs pumpkin (cleaned)
  • 5 eggs
  • 2.5 oz cooked ham
  • 3.2 cups breadcrumbs
  • 3.5 oz emmental cheese
  • to taste fine salt
  • to taste olive oil
  • to taste rosemary
  • to taste black pepper (ground)

Steps

  • Wash the pumpkin, remove the skin with a vegetable peeler.

  • Cut slices about 3/16 inch thick.

  • Lightly salt the pumpkin slices, place two small pieces of emmental cheese on the first slice, then a piece of cooked ham, and finally two more slices of emmental cheese.

  • Coat in breadcrumbs on both sides. Then repeat the process in the egg and then in the breadcrumbs to get a double coating.

  • Place the cordon bleu on a baking sheet covered with parchment paper. Sprinkle with fine salt, then olive oil, and place a sprig of rosemary on each.

  • Bake at 356°F for about 35 minutes, broil the top for the last 5 minutes. Serve hot.

  • And enjoy your meal!
