Ingredients
- 1.1 lbs pumpkin (cleaned)
- 5 eggs
- 2.5 oz cooked ham
- 3.2 cups breadcrumbs
- 3.5 oz emmental cheese
- to taste fine salt
- to taste olive oil
- to taste rosemary
- to taste black pepper (ground)
Steps
Wash the pumpkin, remove the skin with a vegetable peeler.
Cut slices about 3/16 inch thick.
Lightly salt the pumpkin slices, place two small pieces of emmental cheese on the first slice, then a piece of cooked ham, and finally two more slices of emmental cheese.
Close like a sandwich by placing another pumpkin slice on top. In a bowl, beat the eggs with two pinches of fine salt and one of ground black pepper. Dip the pumpkin cordon bleu in the egg on both sides.
Coat in breadcrumbs on both sides. Then repeat the process in the egg and then in the breadcrumbs to get a double coating.
Place the cordon bleu on a baking sheet covered with parchment paper. Sprinkle with fine salt, then olive oil, and place a sprig of rosemary on each.
Bake at 356°F for about 35 minutes, broil the top for the last 5 minutes. Serve hot.
