If you’re looking for a tasty and flavorful main dish, which can also be considered a one-dish meal, the Baked Spaghetti Omelette will meet your needs. Also great to eat cold, it can be prepared for a picnic or an outdoor brunch.

Ingredients
- 8.8 oz Spaghetti
- 5 Eggs
- 15 Black olives
- 15 Green olives
- 14.1 oz Tomato sauce
- 3.5 oz Cooked ham (sliced)
- 3.5 oz Cheese (hard, like Galbanino)
- 1.8 oz Pecorino (grated)
- 2 tsp Coarse salt
- 3 pinches Fine salt
- 4 tbsp Breadcrumbs
- 1 pinch Thyme
- 1 pinch Basil
- 1 pinch Marjoram
- 1 pinch Rosemary
- 1 pinch Oregano
- 1 clove Garlic
- to taste Olive oil
- 1 tsp Sugar
- 1 Mozzarella (4.4 oz)
Preparation
Heat a bit of oil in a small pot, halve the garlic clove and sauté it. Add the tomato sauce, halved olives, some basil, two pinches of fine salt, one of sugar, and cook for about half an hour.
In a bowl, whisk the eggs with 3 pinches of fine salt and the pecorino.
Boil plenty of water in a pot, add the coarse salt once boiling, and cook the spaghetti. Drain them two minutes before the cooking time.
Place the spaghetti in a bowl, add the sauce, the mozzarella cut into small cubes, the egg mixture, and mix with a fork.
Prepare the breadcrumb coating for the baking dish by mixing the breadcrumbs with finely chopped basil, marjoram, rosemary, oregano, and thyme: .
Spray a 10-inch baking dish with butter spray and dust it with the breadcrumb coating.
Place half of the seasoned spaghetti in the baking dish, covering the bottom well, add a layer of hard cheese slices, then a layer of cooked ham, and cover everything with the remaining spaghetti.
Bake for 30 minutes at 356°F.
Notes
Instead of butter spray, you can use a small piece of stick butter.
There are ready-made breadcrumb coatings available in stores that can speed up the preparation, or if you prefer, you can simply dust the bottom of the baking dish with breadcrumbs.
Instead of cooked ham, you can use other deli meats (mortadella is a great substitute), the same goes for hard cheese, as long as it’s not too watery.
