Baked Tuna Stuffed Peppers

I guarantee that if you try these Baked Tuna Stuffed Peppers, you will be amazed by their truly unique taste, a flavor that will win you over at the first bite! Be sure not to pick peppers that are too large, otherwise, you won’t have a good balance between the taste of the filling and that of the vegetable.

Ingredients

  • 1 tbsp Breadcrumbs
  • 2 tbsps Grated Parmigiano Reggiano
  • 10 Pitted Green Olives
  • 1 tsp Capers
  • 2 Cans of Tuna in Oil (2.8 oz each)
  • 2 Medium Eggs
  • 10 Anchovies in Oil
  • 1 tsp Parsley
  • 8 Round Peppers (approx. 2 inches diameter)
  • 1 pinch Ground Black Pepper
  • 1 sprig Chopped Parsley

Preparation

  • Wash, dry, and remove the seeds from the peppers, trying not to break them.

  • In a mixer, prepare the filling by adding the tuna with its oil, anchovies, olives, and capers.

  • Add the breadcrumbs, Parmesan cheese, eggs, and parsley, and mix well.

  • Once the ingredients are well combined, the filling is ready.

    If it is too dry, add a little olive oil.

  • Stuff the peppers with the mixture (not to the brim, otherwise it will overflow during cooking), place them in a baking tray (if you prefer, cover it with parchment paper), and bake at 356°F for about 45 minutes.

Suggestions/Tips

The number of peppers you can fill may vary based on the size of the peppers.

Do not overfill the peppers, as the filling will tend to overflow during cooking.

Once cooked, if you don’t like the skin of the peppers, you can easily remove it.

You can use peppers of various sizes, we prefer those that are not too large.

To have peppers available all year round, I freeze them when in season: wipe them with a cloth, place them uncooked in freezer bags, and freeze them. Before consuming, take them out in advance and thaw them completely, removing the stem and internal seeds.
