Baked Whole Grain Rice Timbale

The baked whole grain rice timbale is certainly a tasty dish that usually pleases the whole family. For this main course, I chose cooked ham and pork cheek, which makes it even more appetizing. Whole grain rice has a decidedly long cooking time, about 30 minutes, but it gives a more rustic flavor that we really like.

Ingredients

  • 1 1/4 cups whole grain rice
  • 2 cups milk
  • 3 cups water
  • 3 1/2 oz pork cheek
  • 5 1/2 oz cooked ham
  • 5 3/4 oz stracchino cheese
  • 4 1/2 oz mozzarella
  • 5 eggs
  • 2 tbsps Parmigiano Reggiano DOP (grated)
  • to taste olive oil
  • 1 tsp coarse salt
  • 1 onion (small)

Preparation

  • Put the milk and water in a pot, bring to a boil, add the coarse salt and the whole grain rice. Cook for about half an hour, until all the liquid has evaporated.

    In a pan, add a little olive oil and sauté the finely chopped onion, add the diced ham and pork cheek and brown for about 5 minutes. Mix in the stracchino cheese and let it melt. Add the rice without draining it to the pan and let it dry slightly.

    In a bowl, place the seasoned rice, diced mozzarella, and beaten eggs. Mix well and then place the mixture in a 28 cm baking dish lined with previously moistened parchment paper.

    Sprinkle the surface with two tablespoons of grated Parmigiano. Bake in the oven at 350°F for about 35 minutes.

Tips/Advice

Of course, you can use the ingredients you like best, such as prosciutto, mortadella, emmenthal, smoked scamorza, according to your personal taste.
