Boiled Beef is a really great dish, very easy to prepare, but truly tasty. It is important to choose the most suitable cut of meat (a good boiled beef is especially obtained with brisket, beef shank, chuck rib, and chuck). It is a typical Piedmontese dish, even though Mixed Boiled Meat is much more known. Pairing it with Uncle Giuseppe’s Green Sauce is a winning combination.

Ingredients
- 2.87 lbs beef (for boiling such as beef shank)
- 7 oz carrot (2 nice cleaned carrots)
- 2.47 oz onion (1 small cleaned onion)
- 6 leaves bay leaf
- 20 juniper berries
- 6 cloves
- 1 tbsp coarse salt
- 3 tbsp olive oil
- 3.17 qt water
Preparation
Wash and clean the carrots and onions. Roughly chop them.
In a large pot, place about 3 quarts of water. Put the meat pieces in the cold water. Add the vegetables, bay leaves, juniper berries, and cloves.
Season with salt and olive oil.
Turn on the heat and wait until the water starts to boil.
At this point, cover and lower the flame to the minimum. Simmer over low heat for about 3 hours, ensuring there is always a very gentle boil. If fat forms on the surface, skim it with a slotted spoon and discard it.
Check with a carving fork that the meat can be easily pierced, indicating it is tender and properly cooked.
Drain the meat from the broth and place it on a plate. Slice it.

Tips/Advice
A good boiled beef is especially obtained with brisket, beef shank, chuck rib, and chuck.
For boiled beef, it is common to immerse it in hot water if you want the juices to stay inside, but if you use good meat, this method will also yield an excellent broth.
The obtained broth is delicious and can be used in the preparation of tortellini in broth, delicious risottos, or you can freeze it in ice cube bags and use it whenever needed.
