Broccoli and Prosciutto Rolls

Broccoli and Prosciutto Rolls are a great way to present a vegetable that is sometimes not too loved, especially by children, and an incentive to taste even for the most skeptical people. You can try it!

Ingredients

  • 2 cups broccoli (boiled)
  • 2 tablespoons breadcrumbs
  • 2 tablespoons Parmigiano Reggiano DOP (grated)
  • 3.5 oz prosciutto (sliced)
  • 1 teaspoon parsley (chopped)
  • 1 tablespoon olive oil
  • 1 pinch fine salt
  • 1 pinch dried chili pepper (crushed)

Preparation

  • Sauté the boiled broccoli in a pan with a bit of oil and a pinch of salt if necessary.
    Remove them from the pan, let them cool, then group them into bundles of two or three and wrap them in slices of prosciutto, securing them with a toothpick.
    Put them back in the pan and sauté the small rolls on both sides.
    In another pan, put a tablespoon of oil, the Parmigiano, breadcrumbs, parsley, and chili pepper, and toast well.
    Plate the broccoli and sprinkle them with the breadcrumb mixture.

Notes

If you don’t like spicy, you can skip the chili pepper, but if you do, go ahead and add more!
